Vegan Sugar Cookies with Icing!

To say I’ve been on a cookie making streak would be an understatement. Baking cookies is one of the best ways to get into the holiday spirit! And what says Christmas more than a sugar cookie?! Now in the past few weeks I have made this recipe about 4-5 times, so I’ve had time to improve my non existent icing skills and getting the perfect cookie shape. It’s best to prepare your dough and icing ahead of time if you can. That gives everything time to set and you more time to bake and decorate the cookies themselves.

Sugar Cookie Recipe

1 ¾ cups all purpose flour

½ tsp baking powder

5 tbs vegan butter

¾ cup granulated sugar

1 ½ tsp egg replacer or flax egg

2 tbs water

½ tbs vanilla extract

Royal Icing Recipe

1 ½ tsp egg replacer or flax egg

2 tbs water

1 tsp lemon juice

¼ tsp almond extract

¼ tsp vanilla extract

1 ½ cups powdered sugar

Method: Preheat oven to 350 degrees. Cream together the sugar and butter. Mix dry ingredients in separate bowl then add into wet ingredients. If dough is too dry, add tbs of water at a time. Form into bowl and cover in cling wrap and place in fridge for 1 hour or overnight. Roll dough between two pieces of parchment, cut your cookies and place on non stick cooking sheet. Place in fridge to cool again before baking so cookies keep their shape. Bake for 10-12 minutes. Wait for cookies to cool before you decorate and enjoy!
