Vegan Linzer Cookies

I think linzer cookies have always been my favorite Christmas cookies. I used to stuff myself full of them every Christmas eve at my uncles christmas party. So once again, I had another vegan challenge! I searched for a recipe and finally landed on one I could work with. These cookies are a lot of work, but they’re well worth it in the end. They make beautiful gifts and look wonderful on a plate at parties,, and they look the best when they’re being eaten hahah!

2 cups all purpose flour

½ cup finely ground almonds

½ tsp baking powder

½ tsp baking soda

Pinch of salt

½ cup maple syrup

¼ cup or more canola oil

1 tsp vanilla extract

2 tsp almond extract


Method: Mix together dry ingredients in bowl. Mix together wet in a separate bowl. Mix wet into dry ingredients with a  rubber spatula (you may have to use your hands half way through). Dough should form a somewhat crumbly ball (I had to add more oil later because dough fell apart). Refrigerate for a hour, Roll out dough between two pieces of parchment then use your linzer cookie cutter to make your cookies. Carefully set on nonstick cookie sheet, cookies will be delicate. Set in fridge so cookies keep their shape when baking. Bake at 350 for 10 minutes, you don’t quite want them golden brown. Dust tops (and bottoms if you want) with powdered sugar after baked. Spread 2 tsp of your favorite jam on the bottom halves of the cookies and set top halves on top like a sandwich. Let sit so they can set up. Then happily eat your cookies!
