The first time I had french onion soup it was from a recipe out of the Harry Potter cookbook. It of course wasn’t vegan, and it also wasn’t good. Well, I didn’t think so. So I just took that as, ‘Oh, i don’t like it’. But lately on all the cooking shows they’ve been making it and I’ve been craving it. So me and mom were on a mission to make it this weekend.
What I love about this soup is how simple it is. If you don’t want to get fancy with it, you don’t have to.
1 onion per person eating the soup (we used 2 onions per person)
Vegetable broth or vegan beef broth
2 tbs flour for thickening
1 tbs thyme
2 bay leaves
½ tbs olive oil
(Optional) 1 baguette and vegan provolone cheese
Method: Roughly cut onions and add them to pot with a splash of water and olive oil. Let caramelize at medium low heat for 40ish minutes. Add in broth. Let cook for a few minutes. Add more broth, thyme and bay leaves. Let cook for 15 minutes. Bake bread and cut into ½ thick pieces. Shred your cheese if not shredded already. Add soup into ramequin, place bread on top and sprinkle cheese on top. Put under broiler for 5 minutes and enjoy!!!
This recipe is seriously good. Veganism is such an amazing way of life! All the taste without the guilt!
