Roasted Tomato Soup

The other day we got our Vitamix 750 in the mail and we are still more than excited! Luckily and by smart planning, my fiancé managed to get it for $130 which is quite a steal!

One of the first things I wanted to try to make other than amazing smoothies was soup! Preferably tomato soup because that is the favorite in our house!


This recipe is seriously simple and yummy!


1 head of garlic
Tons of tomatoes on the vine
1 yellow onion
1-2 cups vegetable broth

½ cup coconut milk

Preheat oven to 400F.
Chop your tomatoes and onions and place on parchment paper on baking sheet.Combine with tomatoes and season with salt.
Take your head of garlic and remove some of the peel. Slice the top off the garlic, exposing the cloves (see picture). Place onto aluminum foil and wrap.
Place your baking sheet into the oven and bake for 40-45 minutes, or until vegetables are slightly caramelized
Allow garlic to cool slightly. Move the veggies to a large pot. Pour in the broth and coconut milk. Bring to a boil and simmer for 15 minutes. Transfer the soup in batches to a blender and puree until smooth. Return to the pot and season accordingly. I served mine with some low fat club crackers which made it even better!
