Remember those pre-packaged oatmeal pies you used to eat when you were a kid? They were soft and full of yummy sugar. Never mind the preservatives and chemicals! You didn’t care back then! But the other day one of my co-workers asked if making vegan oatmeal pies was possible. Of course! Can you use sugar he said? Do vegans eat sugar? Yes they do!
1 cup rolled oats
½ cup whole wheat flour, ½ cup all purpose
¼ maple syrup
4 tbs vegan butter
1 cup brown sugar
2 tbs cinnamon
1 tsp baking soda
2 tbs egg replacer (neat egg or flax meal)
Frosting was store bought (vegan)
Mix dry ingredients first then begin to add in wet ingredients. Dough will be thick. Preheat oven to 350 degrees fahrenheit. Take tbs size amounts of dough and form in ball. Flatten in hand to desired cookie size. Place on parchment paper on a baking sheet. Cook 10 minutes! Wait for cookies to cool before putting on frosting. Apply frosting to bottom of cookie and lay another on top!
